Cranberry Sauce

Quick and easy, can be made in advance and kept in the fridge… can make a good gift too!

2 cups of dried cranberries

3 tablespoons brown sugar

juice of 2 oranges

juice of 1/2 a lemon

2 cups water

1/2 tbsp grated fresh ginger

6 tbsp port

METHOD:

Place the cranberries, sugar, lemon juice, orange juice, water and ginger in to a sauce pan and bring up to a boil for 3 minutes.

OPTIONAL: Take it off the heat and give it a quick blend with a hand blender or a food processor - either a quick pulse or if you rather it smooth do it for longer.

Add it back to the pan, add the port and simmer for a further 3 minutes.

Kept in the fridge, it will last about 3 weeks.

REMEMBER, it’s not just for a Christmas turkey - great with brie, spread on toast, a festive bbq glaze, fruit sauce to go with ice cream, so many more options.
