Apple Cake! - A great way to use up all the apples and freezes well too!

INGREDIENTS

275g self raising flour

1 teaspoon salt

1/2 teaspoon cinnamon

1/4 ground cloves

125g butter

180g caster sugar

teaspoon vanilla extract

1 egg lightly beaten

350g cooking apples, grated, (dont bother peeling)

METHOD

  1. Grease a 18cm square baking tin, and line with greaseproof paper.

  2. Sift together the flour, salt and spices.

  3. Cream the butter and sugar until pale and fluffy

  4. Slowly add the egg and vanilla extract

  5. Bake in a preheated oven, at 180*C for approximately 1 hour 15 minutes, until cooked.

  6. leave to cool for a few minutes in the tin and then turn out onto a cooling rack.

This is an adaption from a recipe in my mum’s ancient M&S freezer cook book. Its a winner and a great way to use up the apples!
